Miso Ginger Glazed Carrots

IMG_7651Holy balls…the farmers markets are finally here and that means fresh carrots with dirt residue still hanging on them…it’s the little things that get me excited.

Head to the farmers market right now and get some fresh ass carrots and eat them raw with some tahini, put them in salads, roast them, or make these delicious miso ginger glazed carrots for a little something special!

I am quite taken by the beauty of little bunches of carrots. All the different sizes and slight variations in color…and the occasional hugging carrots that make you feel slightly bad for eating them…

Well this recipe will not make you feel bad for eating them and puts a spin on your average carrot eating, so give it a go!

Farmers-market-carrots

Miso is a paste that is made by fermenting soy beans. At HR we recommend only consuming fermented soy as it allows the protein and nutrients to be more bioavailable because they are already broken down. It is also important to buy organic miso or soy products to avoid GMO’s. Miso contains beneficial enzymes and probiotics which are important for gut health and also contains anti-cancer benefits.

Garlic is a food we talk about ALL the time because it is truly nature’s antibiotic and absolutely fabulous for your health.

Carrots are loaded with vitamin A (beta carotene) as well as other carotenoids and antioxidants like vitamin C.

  • 2 cups carrots cut on the bias…or not, but I dig bias cuts
  • 2 tbsp sesame oil
  • 2 tbsp ACV or rice vinegar
  • 2 tbsp miso
  • 1 inch peeled ginger
  • 2 garlic cloves
  • red pepper flakes (to your spice desire)
  • 1/4 cup green onions
  • 1/2 cup chopped cilantro

  • Chop carrots in desired fashion.
  • Blanch or steam carrots (shortens cooking time and allows you to not heat the miso too much, allowing more of the beneficial enzymes and probiotics to stay in tact.).
  • Blend ginger, garlic, sesame oil, ACV, miso, and red pepper flakes into a sauce.
  • Toss steamed carrots with miso mixture, green onions, and chopped cilantro!
  • Optional: Add in some toasted sesame seeds…umm yumm!
