Holy balls…the farmers markets are finally here and that means fresh carrots with dirt residue still hanging on them…it’s the little things that get me excited.
Head to the farmers market right now and get some fresh ass carrots and eat them raw with some tahini, put them in salads, roast them, or make these delicious miso ginger glazed carrots for a little something special!
I am quite taken by the beauty of little bunches of carrots. All the different sizes and slight variations in color…and the occasional hugging carrots that make you feel slightly bad for eating them…
Well this recipe will not make you feel bad for eating them and puts a spin on your average carrot eating, so give it a go!
Miso is a paste that is made by fermenting soy beans. At HR we recommend only consuming fermented soy as it allows the protein and nutrients to be more bioavailable because they are already broken down. It is also important to buy organic miso or soy products to avoid GMO’s. Miso contains beneficial enzymes and probiotics which are important for gut health and also contains anti-cancer benefits.
