Raw Blueberry Cheesecake Bites!

IMG_6423This decadent and beautiful recipe was created in honor of my lovely friends birthday! She is vegan and deserved a totally jaw-dropping dessert, so it was time to get working in the kitchen!

After investigation…a raw cheesecake was a must!



Ingredients (crust):

  • 1/4 cup walnuts
  • 1/4 cup almonds
  • 3 dates
  • 1 tsp sea salt

Directions (crust):

  • Blend all ingredients together until sticky
  • Press into cupcake or muffin molds




Ingredients (cheesecake):

  • 1/2 cup soaked cashews
  • 2 tbsps coconut oil
  • 1/2 tsp seal salt
  • 1 tbsp lemon juice
  • 3 tbsps maple syrup

Directions (cheesecake):

  • Blend all ingredients together until smooth
  • Pour over crust


Ingredients (blueberry topping):

  • 1/2 cup blueberries
  • 1 tbsp maple syrup
  • optional: candied orange peel

Directions (blueberry topping):

  • Heat blueberries with maple syrup to a simmer
  • Back off heat quickly and mash blueberries with spoon or fork
