Raw Carob Brownies

photo 1My family is in full holiday mode and one of my jobs is to make healthy treats that we can enjoy throughout the week and without feeling sluggish OR missing out on the holiday palate party! These raw carob brownies were made especially for my pregnant sister who is just as obsessed with carob as I am.

Not only do these taste decadent, but they contain essential fatty acids as well as high levels of minerals that are important for a growing belly(baby)…and those of us who don’t want our waistlines to grow.

Ingredient Spotlight:

Dulse (a seaweed) is added to this recipe because seaweeds are the most mineral rich foods in the world! This is an extremely important addition to your diet since produce has become depleted in minerals over carob-isolatedthe years as the health of the earths soil has declined due to poor farming practice. This is why it is important to purchase sustainably farmed/raised organic foods; not only will your food contain less chemical residue, but it will also promote healthier soils and a healthier earth!

Carob is a naturally sweet chocolate alternative that is made up of 60% protein and loaded with phytonutrients and fiber!

Nuts and seeds are loaded with healthy fats, protein, fiber, and more! Check out our pantry staples for more info on the benefits of each nut/seed!

Ingredients:

  • 1/2 cup almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup walnuts
  • 1/4 cup carob
  • 1 tbsp honey
  • 2 tbsps coconut oil
  • 2 tbsps dulse
  • 2 tbsps cacao nibs

Directions:

  • Blend all ingredients together except for cacao nibs!
  • Once blended, stir in the cacao nibs, form into a square, and cut!
  • Store these in the refrigerator or freezer to enjoy as a nutrient filled treat!
