Gingerbread cookies!


Who doesn’t love a good gingerbread cookie?! Especially the crispy, crunchy, snappy gingerbread ones! We are loving this recipe because it provides just that! It’s not a soft gingerbread cookie, it’s a crispy one that is perfect for making lovely gingerbread men that hold up for decorating! We had to share this picture from marthastewart.com because it is gorgeous and just screams holiday!

There are so many great things about this recipe besides the flavor and crunch. It also has many beneficial ingredients…mainly the spices!

  • 1/2 cup brown rice flour
  • 1/2 cup almonds ground into flour
  • 2 tbsps ground flax
  • 3 cloves ground
  • 1 tsp ginger or 3 inches fresh
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch sea salt
  • 2 tbsps maple syrup or molasses
  • 2 tbsps coconut oil
  • 1/4 cup water


  • Combine almond flour, brown rice flour, ground flax, spices, and a pinch of salt
  • If using fresh ginger, blend with maple syrup, and water
  • Combine wet and dry ingredients thoroughly, then add the soft coconut oil (not melted)
  • Sprinkle brown rice flour onto parchment paper and then set your dough on top
  • Slightly flatten dough, sprinkle with brown rice flour, and set another piece of parchment paper on top
  • Use your roller to roll out the dough until thin..about 1/8 inch thick or less
  • Cut cookies into desired shapes.

  • Bake cookies on a pan with floured parchment paper at 350 for 15-20 minutes and ENJOY!
