Sweet and Savory Pumpkin Chicken Sandwich


If you’re like us, you have TONS of leftovers from Thanksgiving and at this point might be getting slightly tired of eating the same old thing! So, we thought what better way to celebrate #sustainabilitysunday than to share some creative and delicious ways to enjoy your leftovers in a creative and delightful way.

We have created a couple different ‘recipes’ that we are obsessed with that utilized some of our leftovers! These include, a sweet and savory pumpkin bread turkey sandwich, a turkey and sweet potato quesadilla, and a cranberry barbecue turkey pizza (thanks recipe runner!)! YUM!

Sweet and Savory Pumpkin Chicken Sandwich

Ingredients:photo 1

  • Your favorite pumpkin bread, try our recipe!
  • Baked turkey
  • Garlic aioli
  • Gruyere or parmesan cheese
  • Mixed greens
  • Avocado
  • cranberry sauce (optional)


  • photo 3Warm turkey and toast bread
  • Slather on some garlic aioli, fresh red onion, avocado, and other desired toppings!
  • Then add your turkey and enjoy!
  • Get creative with this recipe, combine your leftovers and flavors that you love and make a banging sandwich. We love the sweet pumpkin bread with the savory turkey…it definitely hits the spot!

Turkey and Sweet Potato Quesadilla

  • Shredded turkey
  • Sweet potato…we used our leftover holiday sweet potatoes
  • Your favorite cheese (just make sure it’s organic/pasture raised!)
  • Ezekiel tortilla
  • Spinach or other mixed greensphoto 4
  • Greek yogurt, avocado, and hot sauce (we love cholula!!) for toppings!


  • In a skillet, place your ezekiel tortilla and load it with turkey, sweet potato, shredded cheese, and mixed greens!
  • Heat until the stuffing is warmed and the tortilla is brown.
  • Next, flip the tortilla to make a quesadilla, or top with another tortilla for a larger quesadilla!

Cranberry Barbecue Turkey Pizza



  • Shredded turkey
  • favorite cheese (again…organic and pasture raised!)
  • 3/4 cup cranberry sauce
  • 2 tbsps favorite barbecue sauceTurkeyBBQCranberrySaucePizza6
  • Mixed greens
  • Tortilla or pizza dough!


  •  Preheat oven to 450 degrees and spray a baking sheet or pizza stone with cooking spray.
  • Roll out the pizza dough on the pizza stone or baking sheet and set aside.
  • In a small bowl stir together the cranberry sauce and BBQ sauce.
  • Spread half of the sauce onto the pizza and add the diced turkey to the other half, stirring until the turkey is completely coated.
  • Top the pizza with the cheese, turkey, and sliced red onion.
  • Bake the pizza for 10-12 minutes or until the crust is golden and the cheese is bubbly.
  • Remove the pizza from the oven and top with the chopped cilantro.

Cranberry Grilled Cheese



  • Cranberry sauce
  • Favorite bread (leftover pumpkin or ezekiel!)
  • Favorite cheese
  • Optional: add turkey!


  • Place a piece of break on a skillet with butter or coconut oil to warm and toast.
  • Top this bread with cheese and cranberry sauce and place a second piece of bread on top to create a sandwich.
  • Make sure to toast both sides of the bread until the cheesy filling is warm and melty.
  • Serve and enjoy!
