pumpkin carob chip cookies

Okay, so carob chips are super yum in our opinion and give a little bit of a different flare than your usual chocolate chip cookies…plus add pumpkin and YUMMM! Obviously, these would be just as amazing with chocolate chips if you prefer, but try carob out, we think you will LOVE it!

These cookies are so great because they utilize a seasonal favorite, pumpkin, which is super high in beta-carotene and absolutely delicious! With the other healthful ingredients included in these cookies, they can even be considered a healthful breakfast or snack!

  • 1 cup almond flour
  • 1/2 cup brown rice flour
  • 1/2 tsp baking soda
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/4 cup pumpkin puree
  • 1 egg
  • 1 tbsp melted butter or coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4-1/2 cup carob chips

  • Preheat oven to 375
  • Combine dry ingredients
  • Combine wet ingredients
  • Combine wet and dry ingredients
  • Place onto cookie sheet and bake for 15 minutes!
