Raw Vegan Cheese

20131113-IMG_0558-EditThis is an almond ricotta cheese from blog lovin that I wanted to share because it’s a homemade raw and vegan cheese that is actually super simple! Sometimes the thought of making your own nut cheese can seem daunting, but this is so simple and a great place to start sparking your interest with making your own nut cheese. I am also a huge advocate of eating lots of raw foods, so I think this is awesome! What is even better is that you don’t need a blender!


  • 1 1/3 cup (160g) almond flour (almond meal)
  • 2 T lemon juice
  • 1/2 teaspoon sea salt
  • between 1/4 and 1/3 cup water


  • Mix together almond flour, lemon juice, and sea salt. Mix in 1/4 cup water, and if you have a blender, blend for a few seconds or until whipped and creamy. If not, just mix well. Add water in 1 tablespoon increments to reach the desired consistency, blending or mixing well in between.
