Banana Chocolate Chip Cacao Blondies

photoI had a couple bananas that were getting overly ripe, so I had to make these heavenly little babies this morning! I want to thank the purely twins for this AMAZING recipe! These girls are on fire with some delicious recipes, plus some killer ab workouts and serious motivation! They are transparent with their journeys and just lights of joy!

These blondies are vegan, gluten free, and packed with some amazing healthy fats from chia seeds and coconut oil. You can find their original recipe here, but I will post the recipe that I use with the macronutrient breakdown!

Recipe (makes 8):

  • 1/3 cup garbanzo bean flour
  • 1/3 cup or 2 scoops of perfect fit protein powder
  • 1/3 cup arrowroot starch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsps chia seeds
  • 2 tbsps cacao nibs
  • 2 tbsps enjoy life mini chocolate chips
  • 1/4 cup coconut oil (melted)
  • 1-2 bananas (10-11 oz or 230 grams)

  • Mix all dry ingredients together and blend or mash the banana.
  • Then, add your mashed banana and coconut oil to the dry ingredients and mix!
  • Spread it out evenly on a baking sheet, about an inch thick.
  • Bake it at 325 for 15-20 minutes and enjoy!
