Quinoa and Roasted Vegetable Salad

quinoa saladSo, you may know by now that quinoa is the king OR queen 😉 of all grains because of its high protein content. Plus, it has a very mild taste and is extremely versatile, so it can transformed easily to make different meals or sides.

This is one of my food prep creations! I love to make a lot of quinoa at the beginning of the week so that it is ready to be quickly thrown into any recipe. I also prep a lot of local/seasonal vegetables at the beginning of the week by simply roasting them in coconut oil spray. This recipe can be a complete meal or used as a side dish, giving it even more flexibility.

 

 

Recipe:

  • 1/2 cup quinoa
  • 1 cup roasted vegetables of your choice (try to find vegetables at your local farmers market)
  • 1/4 cup black beans
  • 2 tbsps apple cider vinegar (buy RAW ACV for all of the benefits)
  • 1 tbsp olive oil or some avocado (top with at the end)
  • himalayan salt
  • pepper
  • other seasonings such as cumin, hot sauce, etc.

I love having these items prepped in my fridge because this meal can be transformed into a mexican or italian meal, or simply eaten as is!
